L’Authentic at Saint Christol

Right in the middle of the wine tourism centre of Viavino, local products are at the absolute heart of this restaurant. The chef, Jérome  Fanguin, produces simple, tasty dishes based on fresh Languedoc-Roussillon products. Close to the restaurant, the aromatic garden allows the chef to prepare the food from fresh, in season organic products. There’s also a wine bar which specializes in the region’s best vintages.

L’Auberge du Pont Romain at Sommières

Absolutely not to miss is the regional cuisine that head chef Thierry Michel and Frédéric Michel, the pastry cook, prepare with such enthusiasm. Brothers and colleagues, these two welcome you to their ‘auberge’ which occupies a 19th century carpet factory in the heart of a shady garden in the village of Sommières. The chef’s specialties are distinctly flavoursome and original. On the menu : scallops, cuttlefish, prawns in squid ink sauce,  Rossini beef with Cairanne sauce and skimmed  morello mushrooms. For desserts : Pina Colada, brioche pudding, pineapple and coconut sorbet … Not to miss the delicate chocolates, smooth and fruity or full bodied, mostly conceived from Frédéric Michel’s savoir faire.

La Rose Blanche at Boisseron

Backing onto the ramparts, this charming restaurant greets clients in an old 12th century guard room. The cuisine here is based on fresh local products transformed into great dishes by the Catalan chef, Jean-Michel Salcedo. Occasionally there’s a touch of perfume from the sea … Some of the chef’s specialities : caramelized roast piglet, bass fillet on a bed of sweet potatoes  and balsamic peppers. It features in many guides and you’ll taste the region’s best wines.

Le château de Salinelles

It’s in the outstanding setting of the 17th century Château de Salinelle that young Cyril Ginestier and Aurélie Piaget in the dining room will offer you a classy meal based on local products. In the main courtyard, the calm, shaded terrace is just the place to enliven all your senses. The dishes combine exotic blends, summer savours and Mediterranean aromas. A delightful selection of wines from the Sommières terroir.

You must not miss out on the Bec à Vin in the historic centre of Sommières. It’s a splendid wine bar with great tapas. Cendrine Rivaux-Dreano has hand picked her absolute favourites – wines and producers. As she says : ‘mine, my darlings, my friends. These are people whose only aim in life is to get the best out of their art, a delicious, precious wine. It needs talent, spirit and dedication to make such splendid things’.
